Although it's pretty easy to find the memory values for your ammo stores. Boot up Cheat Engine and search for the exact value, blast off a few rounds in-game on the AA or Flak gun and then alt+tab and search for the new ammo value, repeat the process until you find the appropriate corresponding memory value.

Also, there's a trainer ("Silent Hunter III v1.4b PLUS 3 TRAINER (c)PiZZADOX") which does unlimited ammo, instant reload and no hull damage and seems to work with the Steam version. Only downside is that it always triggers the Antivirus scanners (Mr Antifun trainers on the other hand never cause a problem).
