I found a way to get God Mode in Arizona Sunshine for the Oculus Rift/HTC Vive with CE.
In CE select Float instead of 4byte and type in you're health, let's say you're health is 100, you type in 100 and hit new scan/first scan, after that you are going to a zombie get hit once that will bring you to 88 health normaly or around that, so now you go back to CE and type in you're new health after getting hit by a zombie, in my case 88 health, you type in 88 in CE and hit Next Scan, you will see 2 adresses one that has long numbers and one with the exact same amount as you're health, double click on it so it get moved downwards.
After that you will change it back to 100, and make sure it has a X in the box on the left side, that's it, you now have God Mode, i did use it for the mines for about 5 minutes because i was stuck not enough ammo and tons of zombies coming at you.

For Unlimited Ammo, it's the same thing, but you will be using 4byte instead of float, type in your current ammo, shoot once or twice ingame, and type in the new bullet count and hit next scan, after you found it, also double click it so i gets moved down, type in 300 and again make sure the X is checked in the box on the left.

I was unable to do both at once, so it's God Mode or Unlimited Ammo but you can't seem to do them both.
Also you will have to do this every single time you start up you're game, saving your Cheat Table won't work, or atleast not with me, the adresses seem to change every startup.

For those who have this game and got stuck, i hope this helps a little, because it's really hard to find a trainer/cheat for this game if there is any at all.

P.S: There is a fake Arizona Sunshine Trainer, the person on that site claims it's MrAntiFun's trainer
i did look for it on his personal site (this site) but was unable to find any, so be warned.

this is a dumb question i know but currently has anyone been banned by doing this on co-op

God mode will stay the same throughout. Ammo keeps resetting everytime you load because you have to find the pointer to make it static but you can use both simultaneously and together, you just have to re-evaluate ammo whenever a new level loads or you reload the game.

I've actually started running into an issue now with ammo that if I apply the cheat I can no longer reload weapons when my weapon runs out. I don't know if they've added an anti-cheat code to the game but it is extremely frustrating. :(

NM, don't know what was going on before but it's working again fine for me. To be clear though, I'm not doing ammo per say but clips. Easy to grab especially at the beginning because you pick up so many that you have a lot of values to search in a short amount of time.

FYI, god mode/infinite health works exactly as described above in the first post. If you happen to enter 999, when you get hit, it will drop to 100 but will hold steady at that and will carry over even after a reload.

Downside to all of this is that you need to go through the exact same process every time you stop and start the game, which is a pain in the ass.
