for those who just want to have a sort of God mode.
As has been mentioned everything is searchable 4 bytes in cheat engine
money is simplest and can be done by either going to pedlar buy/sell to change money and get the mem address.
As the battles are done dynamically the hp and mp are done according to your level. wait for first battle.
wait till battle begins.
once it is your turn search for your health or mp value i did mp as it is guaranteed to go down once you use a skill.
should only require you to go down once and you will have the hp or mp value.
Right click value and browse memory region.
depending on if you selected hp or mp look 4bytes back or 8 bytes back and you will see your Level value. Change this to anything you want.
once battle ends your level will be saved into the game. I made it 999 and nobody will be able to touch you after it. Can redo for every char if required. Doing too high a level will make game crash.

Also when you do this ensure you goto oiptions and have auto save ON. As the game won't save properly when you use save function with these high levels. But the auto save will work. You will prob need to change auto save to ON everytime you start game.

for items you can find one items value first. ( buy the item x100 or something search value and sell one item back to find it)
browse memory region again and beside the value you find should be numbers for the items beside that item in inventory and you can change them at same time. Don't freeze these as they will change location too. You may find some values are not beside the item you see this would be because the item is probably of another class and you will need to search the value of item on other side of that item.

Not as good as a trainer but hopefully able to help some of you who find some battles way too long.

Can you elaborate on how much is 4 bytes back? I mean how many row up or down? Thanks.

Hi
each set of 2 digits is a byte
the value you select to browse you be in top left corner so go up a row and if hp should be 8 digits before end of row or if mp should be 16 digits back. it will be fairly obvious as most of them will be 00 and the level will say 03 for level 3. it is hex so anything above 9 will be different as you have A to F after it.
when you right click the level to change it remember to change byte to 4 byte to get the higher levels.

Thanks, i got it to work. But it doesn't unlock other skills for use. So i'm still stuck with the Stone Breaking skill. Is it the same for you?
Have you tried to edit stats like attack and defense? I tried to but it doesn't stuck. It always reverse back to the original value during battle. And so far i have no success with EXP.
