you can find Stamina, Health and money as a Float-byte in Cheat Engine
For stamina sleep until you have max stamina, now look for 100 value, swing your sword once and watch how much stamina is used, should be 2, then type 98 and repeat the process until there's 1 value left which should be it. change that value to 100 and lock it, now you have unlimited stamina.
for Health again sleep until you have max health, and then search for 100 value, then you go find an enemy and let it attack you once, for example slimes should take 5 health from you, so you search for 95 in your next scan, repeat this until there is 1 left
for money i simply used the value of the amount of silver i had, which was 8, then i sold some stuff till i had 9 silver and searched for that, repeat this untill there is again 1 value left, change that value to 9999 and you should have 99 gold and 99 silver.
Edit: all the XP Points(red, green and blue) are also found in float, just search for the value you currently have, unlock a technology that used the XP color you are searching for in CE, after that search for the amount you have left and it should show itself in 2/3 tries, you need points already for this to work, enough for 2\3 searches, if you have trouble getting blue points, what you want to do is unlock the church and do a sermon to get stuff you need to study items, after that go downstairs to the church library to find a study table and study one of the corpse extracted items(blood, skin skull, brain. etc.) all corpse extracted items can be studied once for a various amount of blue points, but 1 should be enough to locate the blue xp value in CE
