You will have to use cheat engine unfortunately.
The only advice i can give is not to 'freeze' any of the values like health or magic since it causes the game to crash and eventually corrupts your saves. Unless you are willing to go through the tedious and complicated process of creating pointers, you will need to find the values manually each time you engage in combat. Otherwise things like learning points and inventory items is easy to cheat
